Party Bites 2: Cucumber Snacks
The recipe that I am sharing with you today is refreshingly simple and ..well..refreshing. Nice cool cucumbers with a dollop of your favorite hummus and a touch of roasted red peppers provide a simple and satisfying snack on a hot summer day. The preparation couldn't be simpler but the dish remains elegant enough to serve at a dinner party.

Slow-Cooker Chickpea Stew
For the past few weeks, I've been so busy with school and work that I've barely had time to think. Luckily for me, I have a slow-cooker (or "crockpot") in my cabinet that I was able to whip out for today's delicious and nutritious meal. I just prepared the ingredients for the slow-cooker, combined them, and turned on the machine. While I was at work, the slow-cooker did its magic and a warm, hearty meal was waiting for me when I returned.
