BBQ Pulled Chicken

Time passes by so quickly but good, home-cooked food has a way of slowing it down. There is nothing quite like sitting down to a delicious hot meal with a couple of your friends, family, neighbors, and whoever else was drawn in by the wonderful aromas wafting from your kitchen. Today's recipe is a hearty BBQ pulled chicken that will be sure to draw in the crowds. The best part is that it takes so little time to make  that you can spend all of your time enjoying it with your friends and family.


I like to serve this BBQ Pulled Chicken on a whole wheat bun with some broccoli slaw. Baked sweet potato fries can be a great addition as well. Using chicken breast instead of pork or even chicken thighs helps to reduce the overall fat and calories in this dish. The slow cooker keeps all of the chicken deliciously moist. 

BBQ Pulled Chicken
Serves 4-6

Ingredients
1.5 lb skinless, boneless chicken breast
1 cup ketchup
1 small onion, chopped
1 clove garlic, minced
1/4 cup dark brown sugar
1 T Worcestershire sauce
1 T cider vinegar
1 T brown mustard


1 T honey
1 tsp cayenne pepper
1/2 tsp paprika
1/2 tsp garlic salt

Methods
1. Clean and trim the chicken breasts. Add them to the bottom of the slow cooker. 

2. Add the remaining ingredients to a medium bowl and stir to mix. Pour over the chicken.

3. Turn the slow cooker on LOW for 5-7 hours or on HIGH for 3-4 hours.

4. When the chicken is done cooking, simply use two forks to tease apart the meat. You will find that the meat is so tender, you barely need to put in any effort.
