Party Bites 2: Cucumber Snacks

The recipe that I am sharing with you today is refreshingly simple and ..well..refreshing. Nice cool cucumbers with a dollop of your favorite hummus and a touch of roasted red peppers provide a simple and satisfying snack on a hot summer day. The preparation couldn't be simpler but the dish remains elegant enough to serve at a dinner party.







The best part is the combination of fiber from the fresh veggies and protein from the hummus will help to fill you up without adding a lot of extra calories. So make these Cucumber Snacks for an afternoon snack with your kids or bring them to your next cocktail party and have the peace of mind that this tasty party bite won't harm your waistline.



Cucumber Snacks
Serves 6-8


Ingredients


2 garden cucumbers, washed and peeled (the most common kind often seen in grocery stores)
1/2 cup hummus
1 Tbsp roasted red peppers, drained and finely chopped
Paprika to taste
Sprinkle of Sea Salt



Methods


1. Cut the ends off of the cucumbers and cut into 1 1/2" slices. Usually I get around 8 slices from the 2 cucumbers.
2. Take a small spoon and scoop out the seeds on one side of each cucumber slice. Think of like you are making a little bowl in the cucumber to hold the hummus.
3. Add 1 Tbsp of hummus to each cucumber, placing it in the carved out side of the slice. You could get extra fancy at this point and use a pastry bag to squeeze the hummus into the cucumber in a more decorative fashion.
4. Top the hummus in each cucumber with a pinch of the roasted red peppers. Add a sprinkle of paprika and salt over the tops of the cucumbers and serve.
